Honeysuckle Riesling is sourced exclusively from the ‘Rosedale’ vineyard in Stanley Flat in the Clare Valley, a region renowned for its riesling. The fruit is 100% handpicked, during the early weeks of vintage, harvested in the cool of the morning to retain freshness.
The wine is whole bunch pressed and fermentation is stopped early to retain natural residual sugar, resulting in an off-dry wine, akin to an Alsace riesling.
Very pale in colour, the wine has lifted, fragrant aromas of lemon blossom and jasmine flower.
A sweet, perfumed front palate becomes crisp and clean, with notes of green apple and finger lime adding to the layered flavour profile.
Bird in Hand Honeysuckle Riesling is ideally enjoyed as an aperitif due to its salivating palate and clean, mineral finish.
