2021 Nest Egg Cabernet Sauvignon

A very dry Spring and warm Summer led to our earliest start to vintage on record. Cabernet Sauvignon parcels were harvested from premium sites and processed with up to 50% whole berries.

Such was the power and concentration of the 2021 Nest Egg Cabernet, the barrels were matured for an incredible 20 months to ensure tannins were fully integrated and to add further complexity to the wine. The final blend included 79% New French Oak barriques, with the remaining 21% being first and second fill French Oak. Only the tightest grained, premium oak selected especially for Cabernet, is used for Nest Egg wines.

All Cabernet barrels were then individually tasted with elite barrels selected for the Nest Egg range based on intensity of flavour, concentration, and finesse. Made in limited quantities, this vintage is comprised of only 3 barrels.

The resulting wine is deep purple with garnet hues. The nose boasts flavours of blackcurrant and cassis, interwoven with delicate notes of violet and mint. The palate is rich and rounded, showcasing a harmonious blend of ripe blackcurrant and bay leaf flavours. The wine's structure is supported by elegant but firm tannins, which lend a velvety texture and a long, satisfying finish. Subtle undertones of dark chocolate and a whisper of eucalyptus add layers of complexity, making each sip a journey of discovery. 

A perfect partner for red meat, enjoy with steak or slow-cooked ribs.
