2025 Bird in Hand Chardonnay

2025 was an excellent vintage, with a warm, dry growing season that helped the fruit develop strong, pure flavours, followed by ideal conditions in autumn for harvest.

The Chardonnay for Bird in Hand was grown in high-quality cool-climate vineyards at Mt Torrens and Woodside. The grapes were carefully handpicked, gently whole-bunch pressed, and the free-run juice was transferred straight into French oak barrels.

Most barrels completed their primary fermentation within 6–7 days, the left to finish fermenting naturally in barrel. During this period, the barrels were stirred weekly to keep the lees in suspension, which helped build extra texture, depth, and flavour in the final palette.

This vibrant white wine has aromas of white nectarine, honeysuckle and roasted hazelnuts. On the palate, concentrated notes of white peach, lime zest and subtle honey spice.

With crisp, finely etched acidity and palate, this vintage expresses strong cellaring potential.
