2018 Bird in Hand O Sparkling

Bird in Hand is world renown for producing some of Australia’s most delicious Sparkling wines. O is the inaugural release of our newest innovation.
2018 O displays aromas of red apple, citrus blossom, honey nougat and cashew whilst the mouth-watering palate seduces with pure, fleshy white peach and lemon zest, subtle oak spice, creamy almond meal with fine beading and a clean, minerally finish.
Sourced from the Bird in Hand Woodside Estate Vineyard, the final blend is made up of 70% Pinot Noir and 30% Chardonnay.
The fruit was hand harvested and delicately whole bunch pressed to both stainless steel tanks and new French oak barrels for primary fermentation. Juice in barrel underwent a wild ferment to add complexity to the final blend. All parcels underwent full malolactic fermentation followed by 6 months on light lees with gentle regular stirring to enhance the mouthfeel. After blending secondary fermentation occurred in bottle - Methode Traditionale. The wines were aged for a further 24 months on lees before disgorging.
O will pair well with a myriad of canapes from delicate Scallops Crudo or Blinis with taramasalata, trout or salmon eggs or would be equally delicious with the freshest Oysters and fine Clam Chowder.
