The grapes sourced for ‘O’ 2021 were handpicked at the break of dawn to retain freshness from the Piccadilly Valley, the coolest subregion within the Adelaide Hills. Vineyards are situated at altitudes between 450-600m resulting in the development of enhanced varietal flavours and elegant acid profile.
A blend of the classic Champagne varietals, Pinot Noir, Pinot Meunier and Chardonnay, this Méthode Champenoise style wine has been aged for two years on lees in bottle before disgorging.
The result is a complex sparkling wine with fresh green apple and citrus blossom, complemented by toasted almond and nougat. Fine beading adds to the creamy texture with a clean minerally finish.
