2023 Nest Egg Chardonnay

The Nest Egg series is an elite group of Bird in Hand wines that have been specifically chosen by the winemaking team to receive the utmost care and attention. Limited quantities available.

Grapes were handpicked in the early morning from three premium cool-climate, high elevation sites including the Bird in Hand Estate vineyard at Woodside.

Using Bernard clones 76, 95 and 96 from Dijon, Burgundy, the fruit was whole bunch pressed directly to a combination of new (50%) and old French oak barrels including D&J and Taransaud. Barrels were left to undergo natural malolactic fermentation and stirred weekly to suspend the lees, giving the wine added texture and flavour. 

Batches spent 10 months on their yeast lees in barrel prior to blending. Every Chardonnay barrel was then blind tasted and graded by the winemaking team. Larger format oak featured significantly in the final blend.

Nectarine, yellow peach and citrus blossom work harmoniously with cashew, vanilla bean and honeysuckle on the nose. The palate is richly textured with powerful lime, pink grapefruit and sandalwood spice along with lively acidity, giving length and freshness to the wine. A delicate and elegant vintage with excellent ageability.

Matured in the finest French oak for over 20 months, this extremely limited wine will cellar exceptionally well and reward the discerning collector.
