During fermentation, careful cap management led to a fuller-bodied, more structured profile, while the inclusion of whole bunches imparted subtle complexity and spice to the blend. The wine was then matured for 6 months in a combination of old and new French oak barrels, enhancing its depth, complexity, and overall character. \u003cbr\u003e         \u003cbr\u003eAromas of black cherries and plums, and hints of blackberry jam, with dry herbs. Oak adds further depth with toasted cedar, vanilla pod, and a light dusting of cinnamon and clove spice. On the palate, the wine is rich and smooth, with dark cherry, red plum, and dried blueberry, and well-integrated oak flavours.
